Qualifications:

  • At least 4 years of culinary experience and prior management experience.
  • A level 2/manager certification food safety certification.
Kitchen Manager

Reports to: Kitchen Manager

Job Purpose:

Under the direction of the Kitchen Manager, the AKM is primarily responsible for supervising and leading the line cooks and prep cooks in their daily duties and cooking activities. AKMs ensure prepared foods meet NHB standards, are prepared with NHB recipes/procedures, and are made following local, state, and federal health codes. KMs ensure a safe, sanitary, and fun working environment.

Essential Functions:

  • Orders food from the purveyor according to par levels and needs.
  • Supervises kitchen staff to ensure NHB standards are followed at all times.
  • Ensures proper stock of all food items getting more if need be.
  • Runs product mixes and knows how many backups of each item we need.
  • Handles employee or guest complaints/grievances according to correct procedures.
  • Supervises kitchen preparation for service and leads the team.
  • Ensures all portion sizes, quality standards, rules, policies, and procedures are maintained by all kitchen employees.
  • Ensures all daily duties are done by kitchen staff 
  • Ensures that the kitchen remains clean and sanitary at all times.
  • Ensures all stored food is properly labeled and coolers are in order.
Other Duties and Responsibilities:

  • Knows how to work the whole line and assists in training all staff.
  • Prepping, preparing, cooking, and expediting food, including a la carte and banquet meals.
  • Ability to stand on your feet for extended periods of time.
  • Ability to lift 50 pounds.
  • Demonstrate a commitment to upholding professional standards in the work environment.
  • Ability to deal with co-workers in a professional manner.
  • Ensure all safety, emergency, and sanitation policies are followed and violations are fixed.
  • Help to do dishes and other cleaning tasks when needed.
  • Ability to put away the truck deliveries while maintaining correct food hierarchy and FIFO.
  • Follow the 5 Ps - Proper Planning Prevents Poor Performance and makes others do also.
  • Leading by example.
  • Wears proper uniform at all times while at work and ensures all others are as well.
  • Anything else the Kitchen Manager needs.

Compensation: $45,000.00 - $50,000.00 per year
